Kingfish Ceviche

Serves 4 | Prep time: 15 Minutes | Cook Time: 10 Minutes


1 x 250gm pack Sashimi Grade Kingfish
1/4 red onion – finely sliced
200gm mixed colour cherry tomatoes – roughly chopped
1 Lebanese cucumber – finely diced
Fresh chives – finely chopped
Fresh coriander – finely chopped
1 lime
1 green chilli – finely sliced
1 red chilli – finely sliced
Good quality olive oil

1 pack round white tortilla chips



  1. Prepare the kingfish by placing it into a bowl, then squeezing the juice of 1 large lime. Season with a large pinch of salt and a good drizzle of olive oil.
  2. Set aside in the fridge for 10 minutes to cure.

Ceviche –

  1. In a large bowl, combine the onion, tomatoes, red chilli, cucumber, with most of the chives and coriander.
  2. Once ready to serve, add the fish and its juices to the bowl and mix gently.

To Plate  –

1.     Serve your ceviche in a flat bowl and garnish with the remaining fresh chives, fresh green chilli and coriander leaves.
2.     Serve alongside a bowl of tortilla chips and an ice cold margarita!
