Ingredients
6 large prawn shells & heads
2 large Bay Lobster heads
400ml grapeseed oil (Or neutral oil)
2 cloves garlic – crushed
2 shallots – finely sliced
Asian Style – optional
1tsp Szechuan peppercorns
1tsp chilli flakes
1 bay leaf
2 cloves
1 star anise
Method
- Take the prawn & lobster heads and shells, garlic and onions and place them into a medium sized pot with a couple of tablespoons of oil. Fry for a couple minute on medium to low until golden and fragrant.
- Add the grapeseed oil and bring to a gentle bubbling heat. Add the aromatics, reduce the temperature to low and simmer. Be sure not to let the temperature get too high or the aromats will burn.
- Remove from the heat and let cool on the stove. Once at a safe temperature, strain the oil through a sieve and place into jars. Use as a condiment on your favourite pasta or noodle dishes, or even for dipping toasted breads.
