Fragrant Lobster & Prawn Oil

Condiment | Prep time: 5 Minutes | Cook Time: 30 Minutes


6 large prawn shells & heads
2 large Bay Lobster heads
400ml grapeseed oil (Or neutral oil)
2 cloves garlic – crushed
2 shallots – finely sliced

Asian Style – optional

1tsp Szechuan peppercorns
1tsp chilli flakes
1 bay leaf
2 cloves
1 star anise


  1. Take the prawn & lobster heads and shells, garlic and onions and place them into a medium sized pot with a couple of tablespoons of oil. Fry for a couple minute on medium to low until golden and fragrant.
  2. Add the grapeseed oil and bring to a gentle bubbling heat. Add the aromatics, reduce the temperature to low and simmer. Be sure not to let the temperature get too high or the aromats will burn.
  3. Remove from the heat and let cool on the stove. Once at a safe temperature, strain the oil through a sieve and place into jars. Use as a condiment on your favourite pasta or noodle dishes, or even for dipping toasted breads.
