Always be careful of the sharp points on shells when handling.
Step 1
Turn your Bay Lobster onto its back (legs facing up) and using a strong knife, insert it into the sternum and cut downward. This might take a bit of pressure.
Step 2
Turn the lobster 180 degrees and repeat.
Step 3
Once cut, gently break the remaining shell by opening the lobster like a butterfly.
Step 4
To remove the “coral” in the head, simply run your finger underneath and scoop out. Remove the intestinal tract and your lobster is ready to cook or serve.
